White asparagus grows underground like a root vegetable. Because it does not grow in sunlight, it lacks chlorophyll which keeps the spears white in color rather than green. Even underground, white asparagus does reach for the light as it grows, resulting is a more delicate, sweeter vegetable. While you can use white asparagus in any dish that requires green asparagus, white asparagus has a unique flavor that alters the taste and texture of your recipe.
